Ingredients for 4 people:4 eggs 1 kg of courgettes 2 medium sized onions 3 potatoes 150 ml. of olive oil Salt and oregano Preparation:The traditional way of cooking this dish is in a clay pan where you fry the finely chopped onion with the olive oil on a low heat. When the onion is transparent, add the courgettes and the potatoes (also chopped very finely.) Season with salt and fry all together for a few minutes. Then, whisk the eggs and add whilst slowly stirring continuously. Finally add the oregano and serve. | ||||
