Ingredients for 10 people:½ kg of ground almonds ½ kg of sugar 7 eggs 100 gr of butter 150 gr of flour 1 teaspoon of cinnamon 1 glass of sherry 50 gr of icing sugar 1 tablespoon of water Preparation:Prepare the pastry with one egg, the butter, the flour and a tablespoon of water. Mix everything well. Spread out the pastry with a rolling pin and place in a round tin that has been previously greased with butter and flour. In a bowl, mix the ground almonds with the sugar and the cinnamon. Add the sherry and the six eggs, one by one. Once this batter is prepared, put it on the pastry and level it out. Then cook it in the oven on a medium to high heat until the batter curdles and the pastry browns. Prick the centre - the cake will be ready when the fork or knife comes out clean. Let it cool and remove from the tin when cold. An optional traditional touch is to make a silhouette of the cross of Santiago using card and put it on the middle of the cake. Then sprinkle over icing sugar and remove the cross. | ||||
