Ingredients for 4 people:250 gr. of lard 250 gr. of sugar 1 egg (for the batter) Lemon rind 500-700 gr. of flour 2 boiled eggs 150-250 gr. chicken Salt Preparation:Boil the chicken and retain the stock. To make the batter, first mix the lard with the sugar and salt. When it has a creamy texture, add the egg, the lemon rind and finally the flour. Add the flour little by little until you achieve a compact batter. Mould the batter into a ball and leave in the fridge to cool. Prepare the chicken and egg stuffing by chopping the chicken and eggs. After thirty minutes take the batter out of the fridge and divide into two. Expand so that the two parts cover a tin. Put one half on the tin and then add the chicken, the egg and a bit of chicken stock. Then put the second part of the batter on top, paint with a beaten egg and cook in a preheated oven at 150 or 160º, until the top is brown. Leave to cool and serve in small portions as a starter or as a main course after a salad or a soup. | ||||
