Ingredients for 4 people:4 fillets of fresh cod 2 scallions 2 green peppers 1 courgette 2 tomatoes 1-2 eggs 2 garlic cloves flour extra virgin olive oil salt parsley Preparation:Finely chop the scallions into cubes, put them in a pan with oil and start frying on a low heat. Chop the peppers and the courgette into cubes, slice the garlic and add all to the pan. Season and cook for 5 minutes. Peal the tomatoes, cut them into cubes and put them in the pan. Cook all together for 15-20 minutes until well done. Cut each cod fillet in two, season, batter with flour and a beaten egg and fry lightly on both sides in a frying pan with oil. Serve the âPistoâ (the vegetables) in the centre of a big platter and arrange the fish around it. Decorate with parsley. | ||||
