Zamora style oxtail with white beans | ||||

Ingredients for 4 people:1 kg of oxtail 1 or 2 onions 1 or 2 garlic cloves 1 tomato 4 bay leaves 150 ml of white wine 50 ml of vinegar 1 tablespoon of paprika 150 ml of olive oil 1 tablespoon of salt 1/2 kg of white beans from Zamora 112 gr. of boiled potatoes Sea salt ½ litre of water Preparation:Soak the white beans in warm water for 12 or 14 hours. Put the olive oil in a saucepan and add the onion that has been previously chopped. When this is soft, add the oxtail, the tomato and two bay leaves. Continue cooking for 10 more minutes and then add the chopped garlic, the paprika, the glass of white wine and the vinegar, ½ litre of water and cook for 30 more minutes. Add the beans and cook for one more hour with the two bay leaves. When tender add some salt and the boiled potatoes. Serve in a clay dish. | ||||
