Ingredients for 6 people:6 eggs 6 slices of Serrano ham 12 slices of chorizo sausage 250g of peas 2 onions peeled and chopped 2 garlic cloves peeled and chopped 2 roasted red peppers cut into small pieces 3 medium sized potatoes peeled and diced 400g of tomato sauce 12 slices of baguette bread Olive oil Salt Preparation:Put plenty of olive oil in a frying pan and fry the potatoes until they are crunchy. Then remove from the pan, remove the excess oil and put to one side. Fry the 12 slices of bread in the same oil. When fried, put them on some kitchen paper to absorb the oil. Fry the onion and garlic in the same oil. When they brown add the tomato sauce and cook for 4 or 5 more minutes. Lower the heat and add the peas, the roasted pepper and the fried potatoes. Mix well and season with salt. Cook for 8 more minutes. Put this mixture into 6 clay dishes. Break one egg in each dish and also place two slices of chorizo sausage and one slice of serrano ham in each. Cook in the oven at 180º for a few minutes until the eggs are cooked. Take the dishes from the oven and serve each with two slices of fried bread. | ||||
