Ingredients for 4 people:150 g of grated cheese 4 aubergines 500 g of prawns 250 g of scorpion fish 250 g of Mazote (a fish similar to Red Bream) 1 onion Tomato sauce American sauce (Sauce à l'américaine) Salt Olive oil 1 glass of brandy Preparation:Cut the aubergines in half length ways, remove the inside and then chop it. Fry this with some chopped onion. Chop the fish and peel the prawns. Add the fish and cook for 5 minutes. Flambé with the brandy. Add 5 tablespoons of tomato sauce and 5 of American sauce. Fill the aubergines with this mixture, sprinkle grated cheese on top and grill in the oven. | ||||
