Ingredients for 4 people:1 trout (about 1 ½ kg) ½ kg of courgettes 5 medium golden apples 300 ml of cider 300 ml of cream 300 ml of fish stock Salt Pepper A few spring onions 100 gr of butter Preparation:Remove the skin and bones of the trout and cut it into fillets. Wash the courgettes and cut them into slices, without pealing. Boil for 10 minutes, drain and put aside. Peal the apples and cut into thick segments. Lightly fry the apples, courgettes and the trout in butter, previously seasoned with salt and pepper. Remove the butter from the pan and add the fish stock, cream and cider. Season with salt and pepper and cook for 10 more minutes while regularly moving the pan. The sauce will reduce. Put the hot courgettes, potatoes and trout fillets on a platter and pour the sauce over the vegetables. Sprinkle with chopped spring onion. | ||||
