Montillana style artichokes | ||||

Ingredients for 4 people:100ml of olive oil 4 garlic cloves 2kg of artichokes 1 pinch of saffron 500ml of beef stock 200g of roasted pork loin 4 tablespoons of flour 250ml of âMontillaâ sherry 1 sprig of mint 2 lemons Salt Preparation:Prepare and clean the artichokes, leaving just the heart. Rub them with lemon. Boil in water and the lemon, adding 2 tablespoons of flour and a pinch of salt. When they are ready, cool them off with cold water, drain and cover. Chop the garlic and fry in a frying pan with olive oil. When it browns, add the artichokes, a sprig of mint, a pinch of salt, the sherry, the pork cut into strips, a bit of saffron, two tablespoons of flour and the beef stock. Cook for 10 minutes and serve. | ||||
