Ingredients for 4 people:1 bunch of asparagus 200 g of carrots 200 g of mushrooms ½ cup of mayonnaise The juice of one lemon Salt Ground pepper Preparation:Remove the hardest part of the asparagus, wash them and cook them in boiling water for 10 minutes. Put them in iced water to harden them and then cut them into chunks. Peal the carrots, wash them and cut them into very fine strips. Boil them for 5 minutes in salted water. Then cool them in iced water and drain well. Wash the mushrooms and slice them. Put them in a salad bowl with the asparagus and carrots. Season with salt and pepper. Mix the mayonnaise with two tablespoons of water from the boiled asparagus and stir. Then add to the bowl. Finally, add the lemon juice to taste, mix well and serve. | ||||
