Ingredients for 4 people:100 gr. of tuna in olive oil 50 gr. of butter or lard 1 ½ tablespoons of tomato purée 2 tablespoons of oil A bit of mustard 1 lemon 5 eggs Salt and pepper Preparation:Hard-boil four eggs and remove the shells. Then cut each egg into four slices. Mix the tuna and the butter until you achieve a fine paste. Then season with salt and pepper. Squeeze this paste onto each slice of egg through a piping bag. Prepare a sauce with the yolk of the fifth egg, tomato, salt and pepper, a little mustard and a teaspoon of lemon juice. Mix all together with a blender, adding the oil little by little as you blend. Cover the eggs in this sauce and sprinkle the finely chopped hard-boiled white of the fifth egg on top. | ||||
