Ingredients for 4 people:250 g of sugar 50 g of icing sugar 11 egg yolks 1 whole egg Orange or lemon rind Water Preparation:Put quarter of a litre of water to heat on a ring and add the sugar. Boil until you achieve a syrup. Whisk the 11 egg yolks with the whole egg and the orange or lemon rind. Add this to the syrup and continue stirring until the yolks set. Remove from the heat and put the mixture on a surface sprinkled with icing sugar. When the mixture is cold, divide it in small portions and mould into ball shapes. Cover with icing sugar. | ||||
