Ingredients for 4 people:White asparagus 4 eggs For the white sauce: 3 tablespoons of flour ½ a litre of milk 1 pinch of nutmeg 75 g of butter Preparation:Make a white sauce by melting the butter in a frying pan and then adding the flour and cooking for a few minutes. Then add the milk little by little until you achieve a white sauce. Add the nutmeg and asparagus and cook for 3 minutes. Remove the pan from the heat and add the egg yolks. Stir all well. Whip the egg whites and then add to the pan and mix very slowly. Spread some butter in a baking tin and add the mixture. Cook in the oven on a high heat for 10 minutes. You can decorate it with peeled prawns or langoustines. | ||||
