Artichokes with peas and broad beans | ||||

Ingredients for 4 people:12 artichokes 500g of peas 250g of fresh broad beans ½ a garlic clove 1 tablespoon of bread crumbs Chopped parsley 1 glass of olive oil Water Salt Ground pepper Preparation:Clean and trim the artichokes. Peel and chop the stalks and put to one side. Put the artichokes in water and a little lemon for a few minutes, to avoid them getting dark when they are cooked. Take them out, drain them and put them in a wide saucepan facing upwards. Add the olive oil and the stalks. Put in the breadcrumbs, parsley, salt, pepper and the centre of the artichokes. Add the peas and the broad beans. Pour in some water to cover them and leave on a low heat for an hour, until they are tender. Serve hot. | ||||
