Ingredients for 4 people:½ a kg of tuna 100 g. of fatty salt pork 6 garlic cloves ½ a litre of dry white wine ½ a kg of lard 8 black peppercorns Salt Preparation:Wash the tuna, remove the skin and leave in cold water for 30 minutes. Peel the garlic cloves, dice the fatty salt pork and crush the peppercorns and garlic in a mortar. Dip the pork in the garlic and pepper mixture. Make some cuts in the tuna with a knife and push in pieces of the pork. Melt the lard in a saucepan, fry the tuna in it and add the white wine and a bit of salt. Cook for 25 minutes, with the saucepan covered. | ||||
