Ingredients for 4 people:6 big ripe tomatoes 2 green peppers 1 red pepper 1 cucumber 1 heart of a big onion, 1 garlic clove 2 slices of bread from the day before and without crusts Salt Olive oil Vinegar Preparation:Soak the bread in water. Add a bit a salt and olive oil. e and chop the tomatoes, peppers (remove seeds), cucumber, onion and garlic. Put all the vegetables in a blender, add a bit of water and blend until you achieve a creamy texture. Add the bread and the vinegar and blend again. Add cold water and mix well. Taste and add more salt or vinegar if necessary. Strain to remove the skin of the peppers. Add more water if necessary. It should have the texture of a creamy soup. Cool in the fridge. When serving add a trickle of olive oil and mix with a spoon. Serve with a garnish of diced raw cucumber, croutons, diced pepper and chopped onion. | ||||
